Dry melange represents the mix consisting of egg yolks and whites of eggs, which is shaken up to a uniform consistence without additional ingredients and dried up to a powdery state. Externally melange looks as the dense weight painted in bright yellow color. Color of the melange depends on a saturation of color of the used yolks.
Mix of their egg white and yolk is already for a long time used commercially as substitute of fresh eggs. Need of replacement arose because of fragility of fresh eggs and short term of their storage. Moreover, as a rule, the food industry which is the main consumer of melange uses mix of egg white and yolk from eggs. For this reason there were whole enterprises for production and supply of melange, and also its dry derivative. Ready egg mix is subjected a further filtration and drying, using technology of dispersion. As a result of this technological process it is possible to receive dry melange or as it is called still, egg powder which is widely used in cookery.
Distinctive feature of dry melange is its long period of storage, and also a good rastvoryaemost in water.
